Add all ingredients (apart from soda) to the cocktail shaker. Shake hard with cubed ice. Fine strain shaker contents over ice. Top with soda, garnish with passionfruit and pineapple leaf.
Pedro Ximénez Cocktails
60ml Pedro Ximénez Whisky | 30ml Fresh Lemon Juice | 15ml Sugar Syrup | 15ml of Egg White | 2 dashes of Bitters
Add all ingredients to the shaker, dry shake (no ice) for 30 seconds to combine the egg whites, add ice and shake again until ice cold, fine strain into a tumbler glass and garnish with a dried orange.
Muddle basil in the cocktail shaker to release the aroma. Add all ingredients to the cocktail shaker (apart from prosecco). Shake hard with cubed ice. Fine strain into a coupe (or goblet over cubed ice). Top with Prosecco and garnish with basil and a lemon twist.
37.5ml RAER Gin | 25ml Bitter aperitif | 12.5ml Elderflower liqueur | 25ml Lemon juice | Egg white
Add all ingredients to the cocktail shaker. Shake hard with cubed ice. Strain out the ice and re-shake without ice. Fine strain into a coupe and garnish with a lemon twist.
Rose Gin Cocktails
37.5ml RAER Rosé Gin | 25ml Peach schnapps | 25ml Lemon juice | 20ml Pink grapefruit cordial | 4 Mint leaves | Soda
Add all ingredients to the cocktail shaker (apart from tonic). Shake hard with cubed ice. Fine strain into a glass over cubed ice. Top with soda and garnish with strawberries, raspberries and mint.
Muddle berries & lime in glass. Add crushed ice to top of glass and add in the vodka and liqueur. Churn and top with crushed ice. Garnish with raspberries and blackberries.
25ml RAER Vodka | 25ml Orange liqueur | 25ml Lime juice | 50ml Cranberry juice
Add all ingredients to the cocktail shaker. Shake hard with cubed ice. Fine strain into a coupe and garnish with orange zest.

Muddle watermelon in the cocktail shaker to release juice. Add all ingredients to the cocktail shaker (apart from soda). Shake hard with cubed ice. Fine strain into a goblet. Top with soda and garnish with a slice of watermelon.
